We whipped up this simple dish last night. It’s a good one because you can prepare as much as you like and have leftovers for days!
Prep time is about 5 minutes and cooking time is about 30 minutes.
- Chicken breast (as many as you want to cook)
- Cauliflower (Any colour is great, any size will work)
- Jalapeno Peppers
- Seasoning for chicken (Mrs. Dash blends work great)
- Black pepper and maybe spicy peppers for cauliflower
Prep and Cooking
This is really simple. Pre-heat the oven to 385. Line a baking tray (the kind with edges) with tinfoil – not necessary, but one less dish to clean! Toss all the chicken breast on the sheet and season as you like – I always use a ghost chili powder for spice and a Mrs. Dash blend for flavour.
Bust the cauliflower up into chunks, size doesn’t matter since we’ll be mashing later. If you like, slice a jalapeno or any kind of pepper. Use a steamer pot or a steamer insert in a big pot, add a bit of water to the pot (you don’t want it deep enough that it is up to the level of the steamer, 1/2″ is usually fine) and toss in the cauliflower and peppers.
When the oven is ready, toss in the baking sheet with chicken. When the chicken is in, start your steamer basket.
The chicken will cook about 30 minutes on average. Smaller breasts may only need 20ish minutes, larger ones closer to 40. A meat thermometer will be your friend here – you may also need to start your steaming a bit earlier or later depending on the chicken size.
Steam the cauli until it is soft when you poke it with a fork. Being very careful not to burn yourself, dump the cauli into a bowl, add black pepper and any seasoning you want, and mash it. Use a fork, a masher, or my favourite – a stick blender!! When that is done, the chicken is ready to come out.
Slice your chicken up nicely (4-6 ounces), give yourself a big scoop of the mash, maybe even top it with plain greek yoghurt, add some greens to the plate and voila! Always take a moment to make your plate pretty! You eat with your eyes too!
